White Rice and Tofu Bowl for Race-Week Lunch

Race-week lunch is white rice and tofu, not leftover chili. The plantbaes.net composite — 2 cups cooked white rice + 150 g firm tofu — is 93 g of carbohydrate, 2.2 g of fiber, and 24 g of protein. That is enough protein for a sitting near 0.3 g/kg for many 70 kg runners, and a serious carbohydrate down payment on 8–12 g/kg (Burke et al., 2011; ACSM 2016).
It is not the whole load. A 70 kg runner at 10 g/kg still needs about 700 g. This bowl is lunch. Breakfast, dinner, juice, and snacks do the rest.
The ~15 g fiber ceiling is a plantbaes.net heuristic, not ACSM. Two cups of brown rice would already be 8 g of fiber before toppings.

Rice at 45 g per cup × 2 = 90 g carbohydrate. Tofu is not a carb food. Soy sauce is salt and a rounding error. The composite row in the foods table is the number to log.
Optional maple in the soy sauce: 2 tablespoons maple is 26 g carbohydrate and 0 g fiber — only if you need grams and you have eaten that mix on a long-run day. Do not turn lunch into dessert for the first time on Friday.
Training bowl vs race-week bowl

A cup of edamame is 8 g of fiber. Avocado is 5 g. They are good foods. They are not this lunch.
Tempeh at the table’s small portion is 3 g of fiber for 10 g of protein. Tofu wins on residue. Night-before pasta can take a small tempeh scoop if that is already your plate (night-before dinner).
Plant protein still needs a full serving for leucine (van Vliet 2015). Do not “lightly sprinkle” tofu to stay vegan-looking. Weigh 150 g.
Takeout and hotel rice
White-rice takeout from a Thai or Chinese counter is often the easiest travel lunch. Ask for tofu, not mixed vegetables in batter. Eat the rice. Leave the piled cabbage.
Brown-rice bowls from fast-casual chains are a common race-week mistake. If the only option is mixed grain, pick another shop or eat the bagel breakfast pattern again: bagel, banana, maple, juice.
Hotel: leftover white rice in the microwave plus grocery-store tofu. Hotel breakfast is morning; this is noon.
Scaling without adding fiber

- +1 cup white rice: +45 g carbohydrate, +0.6 g fiber
- White dinner roll: +20 g carbohydrate, +1 g fiber
- 8 oz pulp-free juice: +26 g carbohydrate, +0.5 g fiber

Leftover rice, food safety, and travel
Day-old white rice is fine if it was cooled quickly and reheated until steaming. Hotel-room rice sitting out overnight is not a fueling strategy.
Grocery-store baked tofu sometimes comes seasoned. Read the panel for honey glazes. Plain firm tofu plus soy sauce is the race-week default.
If lunch has to be a sandwich: white pita or white bagel, tofu or a thin smear of hummus only if you have used hummus on long-run days (hummus is 6 g of fiber per serving in the table — a training food). The rice bowl is still the cleaner load lunch.
