Plant-based runner recipes
Low-fiber pre-run breakfasts, high-carb training dinners, and a 30-minute post-marathon recovery meal.
These split into two groups, and the difference matters. Training-block meals welcome fiber: beans, whole grains, and crucifers all belong there. Race-week meals temporarily remove them, replacing lentils with tofu and whole grains with refined ones while keeping the carbohydrate total the same or higher. Nothing here argues that refined food is healthier — only that it is the right tool for about 48 hours.

Cream of Rice for Runners: The Oat Swap That Saves Fiber
One cup of cooked cream of rice is 28 g of carbohydrate and 0.5 g of fiber. Add maple and a banana for a race-week breakfast you can actually tolerate.

High-Carb Plant-Based Dinner Bowls for Heavy Training Weeks
Rice, pasta, or potato with 20–30 g of protein. Beans belong in the training block; swap to tofu and white starch only in the last 48 hours before a race.

Hotel Race-Morning Breakfast for Vegan Runners
Kettle, microwave, or lobby: white bagel, rice cakes and jam, instant cream of rice, banana, maple, pulp-free juice. Skip the oatmeal bar.

Low-Fiber Vegan Pre-Run Breakfasts (Race-Week Safe)
White bagel, cream of rice, rice cakes, or juice: 1–4 g/kg of low-fiber carbohydrate before the run. Leave oats, chia, and berries until afterwards.

The 30-Minute Vegan Post-Marathon Recovery Meal
Refill glycogen with rice or a soy smoothie, add about 0.3 g/kg protein, and skip expo chocolate milk. Tailwind Rebuild and Skratch Recovery are dairy.

Vegan Carb-Loading Snacks That Fit a Low-Fiber Day
Close the gap to 8–12 g/kg with pretzels, rice cakes, juice, maple, and bagel pieces — not trail mix. Grams and fiber from the plantbaes.net table.

Vegan Recovery Smoothie After a Long Run
A home blender smoothie for training Sundays: sweetened soy, banana, and maple — about 76 g of carbohydrate. Add silken tofu only if lunch will be late. Not the marathon finish-bag recipe.

White Rice and Tofu Bowl for Race-Week Lunch
Two cups of white rice and 150 g firm tofu: 93 g of carbohydrate, 2.2 g of fiber, 24 g of protein. The plantbaes.net race-week lunch, not a training chili.
